Mayotte
Even though as a French Protectorate Mayotte is fairly developed we found it a challenge to find traditional recipes. We watched a food show in French with a host describing the traditional food culture and traditional celebration foods. Victoria translated the show and the emerging theme was the food was quite bland and most recipes were made with simple local sourced ingredients. For this reason the local food culture has more adapted to French and African Fusion. However in trying to keep things as traditional as possible we cooked a traditional meal.
The Menu
Poulet Coco

Desert is eaten with the meal and is not a formal course as in other cultures. However we wanted to kick it up a notch and chose to do the Banana for dessert. Served with this dish it simply was fitting and right.
