U.S. Vigin Islands



Having just done the British Virgin Islands I thought I would have a hard time finding a unique recipe for the U.S. Virgin Islands.  I lucked out and came across a recipe that Ernist Hemingway served to his guests.  Now by no means is this a original U.S. Virgin Islands recipe but in reality there are none but adaptations of surrounding countries and immigrants over time.


Picadillo

Red wine, ground beef, peppers, nuts and raisins make up this recipe.  I did learn about a new trick though and that was to soak the raisins in beef broth before adding to the dish.  Apart from plumping up the raisins it took that really sweet raisin taste and left it with a nice mellow flavour.   This was a simple dish to make however it was full of taste.  Served Simply over rice.
