Antarctica



Antarctica is not a country but an international research continent.  Thus there would be no real food culture or history.  However as it is in our list of countries that we use,  we decided to go with it and see what we could find.  What we did find was a very high calorie diet used by early explorers.  Sledging Biscuits and Pemmican.


Sledging Biscuits

Sledging Biscuits are basically crackers.  We made a version of crackers with rosemary and Parmesan  cheese to eat along with our version of Pemmican.



Pemmican

Pemmican is dense meat packed with its own fat.  Dense meat traditionally Buffalo, Reindeer, Caribou or Deer is dehydrated and ground and then pressed and packed in its own fat.  We decided on a more modern day version and made Antarctica meatloaf.  This meatloaf was made famous by modern research camps ordering meatloaf from a cruise ship that passes by the Antarctica.   Rumour has it the chef on this ship would make big batches and dispatch a small delivery vessel to the research camps on the Antarctica.
