Tuvalu







What an amazing little country with only 50 years to go before its buried under the Ocean.   We had a ton of fun researching this tiny little place with about 7000 inhabitants.   Funafuti is the capital city with about 5000 of the 7000 inhabitants and the international airport only gets 2 flights a week from Fuji.   A siren sounds to warn people to get off the runway when a plane approaches because the runway runs through most of the Island.  

We absolutely love this place and its on my bucket list.  People are full of smiles.  However with a country so small we really had a challenge finding recipes for Tuvalu.  We ended up making adaptations from Sasha Martin's recipes from www.globaltableadventure.com.  Sasha has just published a book about her journey around the world through food.  A very similar tradition to ours and I highly recommend her book Life from Scratch.   Thanks Sasha we are trying an adaptation of your recipes for our day in Tuvalu.

Basmati Rice with Coconut and Star Anise

Tuvalu Curry with Grilled Tuna

Tuvalu Curry

This Curry is an adaptation from Sasha Martin's recipe with the addition of Lime Zest and Coconut flakes.



















Grilled Tuna

Marinated the Tuna in Soy, Lemon and Sesame Oil.



















Coconut Banana Fritters 

Similar to Sasha Martin's recipe with the addition of Vanilla Icing Sugar and Nutmeg.


I like outdoor frying.  I find the induction cookers are great for temperature control when frying.  Plus the mess is minimal to clean up.
