Christmas Island



I think both Victoria and I took a double flip and had goosebumps when Christmas Island showed up as our last country for the year and just a week before Christmas.   The odds of this happening are very slim indeed because we first go by random number to the alphabet and then from that alphabet letter its randomized again to the countries in that alphabet.   On top of that we do not eliminate countries already chosen so if we get a repeat we start over again.  The odds are astounding when calculated out.   The irony of the food on Christmas Island is that it is mostly Malaysian and Chinese oriented even though it is an island belonging to Australia.

The Menu

Ayam Panggang 

A delightful chicken curry flavoured with lemongrass, kaffir lime leaves, tamarind, spices and coconut milk.  This dish was delicious and packed with flavour that just danced in your mouth.


Lychee Pineapple Sorbet

This sorbet I thought was delicious and very refreshing the only problem is we have leftovers and the kids have a stigma of it being winter outside.  I guess it is like walking down Main St with a ice-cream cone in your hand during a blizzard.
