Western Sahara




A small country with a population of around 500,000 in North Africa.   The territory is disputed and has changed hands many times but is now under the administrative control of Morocco.   The cuisine is mostly Arabic in nature and very similar to Moroccan.   Lamb, camel and fish are their main staples and cooking style similar to Morocco.  In a country so small it is almost impossible to find a national dish or special way of preparing something that is uniquely theirs.   After a bit of research I came across a dish that was similar to a lamb tangine.   There really was no desert I could find for this country and generally a sweet dish would be items like dried dates and fruits.

I made a absolutely delicious lamb tangine with chickpeas, figs and preserved lemons.   Preserved lemons are seriously easy to make at home and I usually make a batch to last me the year every December.   Couscous is a staple and is generally served with most meals.
